Ingredients
 15 kg Salmon side
 2 tbsp Ground coffee
 1 tbsp Smoked paprika powder
 1 tsp Garlic granules
 1 tsp Onion granules
 2 tsp Basic brown sugar
 1 Orange peel
 1 tsp Sea salt
Preparation
1

Grate the orange zest and mix with with the rest of the rub.

Lay your Salmon side down on the smoking board and smear it all over with the rub.

Attach your salmon silk to the smoking board and place it next to your Bonfeu fire bowl. Make sure it faces the direction of the wind.

Leave it here for 1.5 to 2 hours. Move it if the wind changes direction.

Feel the top to see if it is cooked properly. Rosé is not a problem.

Take it away from the fire and place it on the table with board and all. Drizzle it with Balsamic syrup.

Attack the salmon together while it is still on the plank!
