2 tbsp Olive oil
1 tbsp Rosemary (finely chopped)
1 tbsp Thyme
1 tbsp Dried oregano
1 tbsp Garlic powder
1 tbsp Mustard
1 Lemon
Salt and pepper (to taste)

Pat the steaks dry with paper towels and brush both sides with olive oil. Spread mustard on both sides of the steaks.

In a small bowl, mix together the rosemary, thyme, oregano, garlic powder, salt, and pepper. Press this herb mixture firmly onto both sides of the steaks.

Preheat the barbecue to medium-high heat. Grill the steaks for 2-3 minutes on each side for a good sear. Then, move them to indirect heat and cook for another 3-4 minutes for medium-rare, or adjust the time for your preferred doneness.

Once cooked, remove the steaks from the grill and let them rest for 5 minutes. Before serving, squeeze fresh lemon juice over the steaks for extra flavor.
