Ingredients
 4 beef sausages (Braai sausage or another round sausage, approx. 100-150 g each)
 16 slices of bacon (about 4 slices per sausage, depending on the size of the sausages)
 4 tablespoons of seasoning rub (about 1 tablespoon per sausage, choose your favourite mix)
 100 g TexMex cheese (or grated spicy cheese, about 25 g per sausage)
 1 green jalapeño peppers, finely chopped (depending on how spicy you want it)
 2 spring onions, finely sliced
 8 skewers (2 skewers per sausage, preferably stainless steel or soaked bamboo)
Preparation

Wrap each beef sausage tightly in slices of bacon. Try to wrap the bacon as tightly as possible with as little overlap as possible so that each piece of bacon gets nice and crispy.

Sprinkle the bacon all around with your favourite spice rub. This gives the bacon extra flavour and a little kick!

Stick two skewers crosswise through the sausage to keep it in the round shape. Use stainless steel skewers or, if you use bamboo skewers, soak them in water for a while beforehand to prevent burning.

Light the BonFeu using the ‘Swiss’ method: place large logs at the bottom and progressively smaller ones on top. Finish with the kindling.

Put a few firelighters between the kindling and in about an hour, the grill ring will be up to temperature nicely.

Make sure you create hot and cooler zones on the grill. Slide the burning blocks/coals to one side of the grill ring and leave the other side without fire.

This allows you to move the sausage wheels to a cooler piece if things are going too fast.

Place the sausage wheels on the grill and grill them until the bacon is nice and crispy and the sausage is well cooked. This takes about 20-30 minutes, depending on the heat and the size of the sausage.

Sprinkle grated TexMex cheese over the sausage wheels, followed by sliced green jalapeño peppers. Top with some chopped spring onions.

Serve the delicious grilled sausage wheels warm and enjoy the great flavours!
