Mix flour, dry yeast, sugar and salt in a bowl.
Slowly add the warm water and knead into a smooth dough.
Add the olive oil and knead again until the dough is soft and elastic.
Let the dough rise until it has doubled in size.
Heat the pizza oven.
Divide the dough into small portions and roll them out into thin mini pizzas.
Brush each piccolini with a thin layer of tomato sauce.
Place thin slices of salami on top of the tomato sauce.
Sprinkle grated mozzarella cheese over the salami.
Add halved black olives for extra flavour.
Bake the piccolinis in the preheated pizza oven until golden brown and crispy.
Remove the homemade salami piccolinis from the oven.
Garnish with fresh basil leaves if you like.
