Ingredients
 200 g mushrooms, cleaned and cut in halves
 1 red pepper, cut into large pieces
 1 red onion, cut into wedges
 1 courgette, diced
 2 tbsp olive oil
 Salt and pepper to taste
 Optional: fresh herbs such as thyme, rosemary or oregano for extra flavour

Preheat Bonfeu's grill rack or plancha over medium-high heat.

Thread the vegetables alternately onto the skewers. Start with a piece of mushroom, followed by pepper, red onion and courgette. Repeat this pattern until the skewers are full, but leave some space at both ends of the skewers for easy gripping.

Brush the vegetable skewers with olive oil on both sides and season with salt and pepper. If using fresh herbs, sprinkle them evenly over the skewers.

Place the vegetable skewers on the preheated grill rack or plancha and cook for about 8-10 minutes, or until the vegetables are tender and have developed nice grill stripes. Turn the skewers regularly so that they cook evenly on all sides.

Remove the skewers from the grill and serve immediately. You can serve them as a side dish with grilled meat or fish, or as part of a vegetarian meal with couscous or quinoa, for example.
