Put your cast-iron pan on top of your plancha or grill.
Get the plancha hot and fry the meat on it. When it's all nicely browned take it off and set it aside.
Cut the onions, red pepper and celeriac brunoise, grate your carrot and crush your garlic cloves. Put a dash of oil in the pan and put your vegetables in here. Let them simmer nicely for at least 20 minutes to get the flavour out.
Then add the tomato puree and de-acidify it between the vegetables.
Add the fried meat, stir it a little and then pour 350 ml La Trappe and 350 ml Bouillon on top.
Bring to the boil and put the lid on. Check every now and then how far the liquid has reduced. If it's too low, add some more beer and/or stock.
Let it simmer over the fire for 2.5 to 3 hours. When the meat is nice and tender, remove it and enjoy!
